Winter Warmers

It seems like winter has finally arrived after our long indian summer with the temperatures over the last few days falling significantly. Put simply, it has been FREEZING. (Though this morning seems to indicate a return to the indian summer). So winter woolies on, curtains drawn at 5, heater on high along with electric blankies and most importantly, heart-warming winter comfort food. Gone are the BBQ's and salads, incoming we have casseroles, mash, pies, soups and puddings.

To coincide with the first full week of winter, my June issue of Taste arrived yesterday, full of winter warming recipes. On the cover, a glorious self-saucing pudding based on the NZ/Aussie Classic, the Anzac Biscuit. Did I mention I love anzac biscuits, caramelly and chewy with golden syrup, oats and coconut? Have I expressed my delight for self-saucing puddings? Do you see where i'm going? 

Yep, the pudding made its way onto my 'must try immediately' list. And so last night I did just that!



Anzac Self-Saucing Pudding

A delicious sponge pudding with the added texture of coconut and rolled oats, a superb butterscotch sauce all served with a dreamy pillow of whipped cream.







Recipe adapted from Allyson Gofton in Taste June 2007
serves 6
1 1/2 cup plain flour
1 1/2 tsp baking powder
100g butter
1/2 cup sugar
1 cup rolled oats
1/2 cup coconut
1 cup milk
1 egg
sauce
2 cup boiling water
50g butter
1/2 cup golden syrup
Sift flour and baking powder into a bowl. Cube butter and rub into flour. Add sugar, oats and coconut. Mix through and make well in the centre. Whisk together egg and milk. Pour into dry mix and stir through gently until a smooth but thick consistency achieved. Pour mix into greased 8-cup capacity ovenproof dish.
sauce
Mix all sauce ingredients together until butter melted and all combined. Pour gently over batter. Bake in 180C oven for 45 minutes. Remove from oven and let cool for 5-10 minutes. Serve with icecream or cream.

Summer's just getting warmed up here in LA (sorry, horrible pun, I know) but this looks too good to delay making! I'll just have to brave the heat and try it out as soon as possible. Thanks!

Snap! I got my copy yesterday and that Anzac pud caught my eye too! My son begged me to make it last night, but I resisted as I really didn't have enough time. Will be making it next week for sure tho. It looks like the type of pud you need lashings of yoghurt or cream with!!

Definately lashings of yoghurt of cream, or icecream. I hadn't thought about yoghurt, but it would be good as it would cut through the sweetness! Next on my list is the lemon delicious pud and I also want to make those Spanish Beef and Chorizo Pies. Mmmmmm

Hello there, hope you don't mind me adding you to my friends list! I'm just so glad to find a New Zealand food lj'er! Most of the food blogs I've been reading have been relishing the fact that they're in Spring so have lovely fresh meals. Meanwhile I'm stuck wanting something hearty that will keep the sleet and disgusting winds we've been having at the back of my mind (I live in Southland and we're getting the full brunt of this cold snap!)

But on topic ;) That Anzac self saucing pudding looks gorgeous...I can almost taste it just by looking at the photo! The gooey caramels and warming oats...gorgeous. I think I'm going to have to pick up the new Taste magazine (or steal my mother's copy!)

I certainly don't mind you adding me. I love new friends!! And I most definately know what you mean-reading all the food blogs from the northern hemisphere full of cherries and berries whilst we stand by our ovens to warm ourselves. I must say were not quite as bad as southland...quite nice in Wellington, but still getting cold. I will be desserting the winter warming food for spring summer fare for 1 month only as i'm going on holiday to Europe on the 20th, but come late July i'll be back into soups, casseroles and puddings! I hope you enjoy my blog!

Loving the blog so far :) It's great to see all the foods you make, and I wish that I could muster the effort to cook/bake/create miracles like you do! But alas studentdom is taking it out me, and making my inner foodie revert to a slug like form living off of quick meals.

I'm sitting in my room listening to the hail on my windows and rolling thunder above now...I think I'm going to have to cook myself up a soup from scratch (more people need to know how to do this!) since I don't think I have enough money at the moment to buy all the ingredients for the Anzac pudding.

And your right, more people should know how to make a soup from scratch. They're not hard!

Update: I made the ANZAC self saucing pudding on Saturday night for my parents and I, and we all loved it. Only fault was I bought some light cream (in attempts to make it more Weight Watchers friendly) and the damn stuff wouldn't whip! I just managed to get it to soft peaks and then it randomly reverted to a liquid form when I turned my back on it for 2 seconds.

I'm so glad you all enjoyed it. Its really good aye?? I must admit i've come close to buying light cream only to stop and think about it at the last minute. I often use low fat icecream instead of cream which i'm not to keen on. Or plain yoghurt. And you'll probably think i'm weird but anything really chocolately can benefit from sour cream.

Thanks. Yep, pumpkin soup is my absolute favourite soup, so I sure do have a yummy recipe for that. Its a family recipe. So you'll see that in the near future!
